Vis a Vis is a product made 100% with Verdejo grapes; a grape selected on the basis of a specific maturation in the field to achieve balanced levels of reducing sugars (alcoholic degree) and acidity.
The entire fermentation process is carried out in autoclave tanks (isobaric tank that does not allow the loss of CO2 during fermentation) with yeasts selected by us.
Fermentation stops when it reaches 5.5 alcoholic degrees and during its slowdown, the final degree reaches 6 degrees of alcohol. A key point and difficult to carry out by natural means, as is done in the VIS to VIS.
The bottling is carried out in an Isobaric bottling machine so as not to lose the CO2 pressure that has cost us so much to maintain throughout the process.
It has beautiful greenish tones with steely nuances and the presence of a fine pearl …… come on, a great pint!
Typical Verdejo varietal aromas emerge on a fresh background with hints of peppermint, which causes you to need to take it now!
It is fresh, very expressive, remembering what it smelled on nose and with a very fine and elegant carbonic. Don’t be surprised if you experience a feeling similar to …… I want more!
