A new style of winemaking by Bodegas el Inicio oenologist and technical director, Ángel Luis Margüello, who has decided for this wine to spontaneously ferment 40% of the grapes in French oak barrels, remaining on its lees for 6 months. The remaining 60% has been made in a steel tank for the same time with the lees.
The result, a definitive coupage that offers the typical freshness of Rueda wines together with a slight touch of wood that adds complexity on the palate and differentiates this ecological Verdejo from traditional wines.
